Baked Dijon Salmon

1/4 c. butter, melted
3 T. dijon mustard
1 1/2 T. honey
1/4 c. bread crumbs
1/4 c. finely chopped pecans
4 t. chopped fresh parsley
4 - 4 oz. salmon fillets
s&p

Preheat oven to 400. In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley. Brush each salmon fillet lightly with honey-mustard mixture, and sprinkle top of fillets with bread crumb mixture. Bake in pre-heated oven 10-15 min. season with s&p.

This is my favorite way to cook salmon. The recipe makes quite a bit of sauce, but you don't want to put too much on or it turns out soggy. I bake it at 350 for 30 min.
